I found out why no peanut butter in the paleo diet…. even though it has good fats it has some lectin (PNA) that is very atherogenic… apparently they feed it to rabbits so they can study atherosclerosis. I can’t promise I won’t still eat some PB!!!
I had a good lunch salad yesterday:

Tuna
Black Olives
Walnuts
Chopped Nectarine
Flaxseed Oil
Pretty good!

I am with you on the pb. Once the challenge is over, it’s back to peanut butter!
I actually incorporated tuna into lunch as well – added some extra virgin olive oil and put over baby spinach. It was a nice change.
